Goli baje

 



Ingredients:

- 1 cup all-purpose flour

- 1/4 cup rice flour

- 1/2 cup yogurt

- 1/2 inch ginger, grated

- 1-2 green chilies, finely chopped

- A handful of curry leaves, chopped

- 1/2 tsp cumin seeds

- A pinch of asafoetida (hing)

- Salt to taste

- Oil for deep frying


Instructions:

1. In a mixing bowl, combine all-purpose flour, rice flour, yogurt, grated ginger, chopped green chilies, chopped curry leaves, cumin seeds, asafoetida, and salt. Mix well to form a thick batter.

2. Let the batter rest for 1-2 hours to allow fermentation. The batter should be of dropping consistency.

3. Heat oil in a deep frying pan.

4. Using a spoon or your fingers, drop small portions of the batter into the hot oil, forming round fritters.

5. Fry the goli baje until they turn golden brown and crispy.

6. Remove them from the oil and place them on a paper towel to absorb excess oil.

7. Serve hot with coconut chutney or any dipping sauce of your choice.
